Sezaki crafts the highest-quality Hongarebushi, following time-honored Japanese traditions. After nearly 6 months concentrating their umami flavor, his katsuobushi take on a jewel-like luster, and yield a broth that immensely magnifies the appeal of fellow ingredients.
